I love cooking, but some nights we don’t have a ton of time or energy to make something totally extravagant. Luckily, I’ve found a few recipes that I consider no-brainers on busy days, and I’m sharing one of them with you today!
Here’s what you’ll need and everything can easily be found at your local Walmart:
- 2 – Minute® Ready to Serve Garlic & Olive Oil Jasmine Rice
- 2 chicken breasts
- 4 tbsp butter
- 1 shallot
- 1 lemon
- 1 tbsp Flour (we used Gluten-Free)
- 16 oz chicken stock
- 1 tsp fresh thyme
- fresh green beans
- grape tomatoes
- Marcona almonds
- fresh rosemary (optional)
Easy Chicken and Rice Recipe using Minute® Ready to Serve Rice

Lemon-Thyme Butter Sauce
Keep this sauce in your back pocket for any chicken, pork or fish dish! All you need to make a delicious homemade sauce is butter, flour, chicken stock, and a few other aromatics. Start by melting down 4 tablespoons of butter of medium heat, add in your shallot and sweat down for a minute. Next whisk in 1 TBSP of flour. It will start to bubble, that’s normal. Use one hand to whisk, and use the other to slowly pour in the chicken stock. This ensures that your sauce is clump-free! After the liquid is smooth, turn up the heat slightly and allow the sauce to start thickening. While the sauce is reducing you can add in salt and pepper and stir. After 5 minutes of the sauce reducing, you can add in the juice of one lemon and chopped thyme, and continue to whisk. The sauce should be fully reduced in 10 minutes and ready to serve over your dish!
