Cooking is one of my favorite hobbies and it truly doesn’t stress me out at all, in fact, it actually helps calm me. While all that is true, some nights cooking dinner can seem daunting after a full day. Luckily, I’ve found a few recipes that I consider no-brainers on busy days, and I’m sharing one of them with you today! Here’s what you’ll need:
- Minute® Ready to Serve Cilantro & Lime Jasmine Rice
- 1 avocado
- 2 thin chicken breasts
- Jerk marinade
- 1 can black beans
- 1 mango
- 1 lime
- 1 red pepper
- Salt & Pepper

Jamaican Jerk Rice Bowl Recipe

To start, we marinade 2 chicken breasts in a jerk marinade. Ideally, you want to marinate for a few hours but a quick 30-minute bath will still infuse great flavor. Grab the marinated jerk chicken and fresh red pepper and throw on the grill!
While my husband prepares the chicken and roasts the red pepper on the grill, I can start prepping the other elements for our Jamaican Jerk Chicken Bowls.

- Avocado Puree – Add 1 avocado, 1/2 juice lime, salt, and pepper to a medium bowl and use an immersion blender to create a puree. If you don’t have an immersion blender, no problem just mash with the back of a fork and continue until smooth

- Black Beans – drained and rinsed
- Minute® Ready to Serve Cilantro & Lime Jasmine Rice- Heat for 90 seconds according to instructions on box
Assemble everything in your bowl and enjoy immediately!
This rice bowl recipe has total island vibes! It’s the perfect dish for Summer as it involves getting outside to grill, sweet taste of mango, and less clean up which means more time to hang on the patio. I would also consider this recipe cost efficient!

Jamaican Jerk Rice Bowl Recipe
Ingredients
- 2 Chicken Breast Cutlets
- Jerk Marinade
- 1 can black beans drained and washed
- 1 mango
- roasted red pepper
- 2 packages Minute® Ready to Serve Cilantro & Lime Jasmine Rice
- 1 avocado
- 1/2 juice lime
Instructions

Place 2 chicken breasts in a bag or bowl and cover with jerk sauce. Marinade for 30 minutes, or up to 4 hours.

Grill Chicken to internal temp of 165 degrees F

If roasting your own red pepper, add to grill as well

To make avocado puree, add avocado (remove pit) to medium bowl. Add 1/2 juice of lime, salt and pepper to taste. Use immersion blender and puree until smooth. If you don't have immersion blender, the back of a fork will work. Stir vigorously until smooth.

Drain and wash black beans

Prepare mango my cutting into slices or chunks

Prepare Minute® Ready to Serve Cilantro & Lime Jasmine Rice in microwave according to instructions on box.

Assemble everything in your bowl and enjoy immediately!
