Weekend in Birmingham, AL
Weekend plans include: no plans at all. I love weekends that have completely no agenda because sometimes those are the ones that end up being the most fun! For weekends spent in Birmingham, we like to start our afternoons at a local brewery like Avondale Brewing or Cahaba Brewing and then usually end up over at someone’s house to nibble and nosh the rest of the night.

Bacon and Fig Jam Flatbread Recipe
I love this pizza slicing tool because it’s easy to use and the flatbread can be portioned into many different sizes, depending on your crowd number.
You can find the fig spread on Amazon, or in the specialty cheese section of your grocery store.
I am usually a big fan of cooking bacon in the oven, but for this recipe I wanted to fry it in a pan so I could use the drippings to cook my onion and garlic in!
This bacon and fig jam flatbread recipe has all the components you’ll love! The sweet fig jam, salty bacon, creamy goat cheese and cilantro all work perfectly together to make this a knockout! Note: For those with a gluten sensitivity, Mama Mary’s also offers GF crusts!!
Recipe makes 2 medium-sized flatbread pizzas

Bacon & Fig Jam Flatbread
Ingredients
- 1 pkg Mama Mary's Thin & Crispy Crust (pack of 2)
- 1 jar Fig Jam Spread
- 2 shallots diced
- 7 strips bacon chopped
- 2 cloves garlic minced
- cilantro
- goat cheese
Instructions

Use instructions on pizza packaging to preheat your oven

Place a large skillet over medium heat and cook bacon until done

Transfer bacon onto paper towels to drain and dry

Pour half of the bacon grease into a heat safe container, let dry and discard later. Leave the other half in pan and saute shallots for 3 minutes. Add pepper

Turn heat down to medium-low and add in garlic

Pour 9 oz jar of fig spread into pan and let the jam melt and loosen into sauce for about 5 minutes. In the meantime, chop cooked bacon into small pieces

Once sauce is loose, distribute evenly between both crusts, add chopped bacon and bake for 7-9 minutes

Remove pizzas from oven and top with goat cheese crumbles and cilantro
