The Best Breakfast Casserole Recipes
The savory smells of a breakfast casserole is exactly what I expect to fill my house with every Christmas morning! These past few weeks, leading up to Christmas, we’ve been focusing on the entertaining aspect of the holidays. Now, it’s all about feeding your soul with comfort foods and good company. It’s time to BRUNCH!
Our brunch menu really is a group effort, and that is what I love most about big gatherings that are mainly centered around food. Sharing recipes is obviously one of my favorite facets of life, and many of our friends have given me inspiration for the dishes on this blog. Potato Chip Hash Brown Casserole
The hash brown casserole has a potato chip topping and if you read the 26 facts about me, you’ll learn that chips are my weakness. I absolutely love chips of all flavors, shapes and brands. I am a big fan of Lays, so the Lays Classic Potato chip is what we’ll be using in my recipe below.

Potato Chip Hash Brown Casserole
Ingredients
- 1 package Simply Potatoes shredded hash browns in the refrigerator section of the grocery store
- 1 stick butter melted
- 1 can cream of celery
- 8 oz sour cream
- 1/2 cup onion chopped
- 2 cups freshly shredded cheddar cheese
- salt and pepper to taste
Instructions

Pre-heat oven to 350 and grease a 9 x 13 baking dish

In large bowl, mix all ingredients together and pour into baking dish

Top with crushed Lays Plain potato chips, and bake for 45 min - an hour until hot and bubbly
Sausage and Egg Breakfast Casserole
This is a classic sausage and egg casserole recipe that everyone loves. Get a head start on the prep for this casserole by browning the sausage the night before and storing it in the fridge. For a crowd of twenty, we usually make two sausage casseroles, and if you’re like us and have someone with a gluten allergy, just make one without the crescent rolls. It still tastes out of this world!

Sausage and Egg Breakfast Casserole
Ingredients
- 6 large eggs
- 1 lb mild Jimmy Dean sausage browned
- 1.5 cups milk
- 1/2 bag sharp cheddar cheese
- 1/2 bag Monterey Jack cheese
- 1 can crescent rolls
Instructions

Pre-heat oven to 375

Grease 13 x 9 pan and lay crescent rolls out flat to cover the entire bottom of dish. Bake for about 6 minutes, then remove from oven and reduce temperature to 350 degrees.

On stove, heat skillet to medium-high and brown sausage

Drain excess sausage grease and set sausage aside

Beat eggs and milk together and season with salt and pepper

Into pan with slightly cooked crescent rolls, add cooked sausage and sprinkle with cheeses. Then, cover pan with egg mixture

Bake 35-45 minutes. Let cool 10 minutes before serving
