Vegan Cauliflower Southwestern Tacos

Ingredients

  • 1 package Wholly Veggie Ranch Cauliflower Wings
  • corn tortillas
  • 1 package slaw mix
  • 1-2 avocados
  • 2 limes
  • Sir Kensingtons Vegan Avocado Oil Mayo
  • Sir Kensingtons Vegan Chipotle Creama
  • cilantro optional

Instructions

  1. If using an air fryer (my favorite method), place cauliflower wings in air fryer basket and set temperature to 400 degrees and cook for 14 minutes

  2. If using oven to bake cauliflower, follow package instructions

  3. While cauliflower cooks, start prepping other taco elements

  4. To make slaw, place package of slaw in medium mixing bowl with 2 TBSP vegan mayo, 1/2 juice of lime, and salt and pepper to taste. Stir to combine and place in fridge until ready to serve

  5. Slice avocado

  6. Once cauliflower is done cooking, use thawed vegan ranch sauce packet that was included in the box and toss cauliflower in that sauce

  7. Place corn tortillas on a plate (double up on corn tortillas for extra reinforcement) and start constructing tacos.

    1. cauliflower wings

    2. slaw

    3. avocado slice

    4. cilantro (optional)

    5. drizzle with vegan chipotle creama

    6. Top with squeeze of lime
