Dips for Summer
Summer is the most social season of the year: backyard BBQs, picnics, and pool parties. But impromptu gatherings and unexpected guests should never stress you out. Dips are so easy to make in a moment’s notice and the recipes I’m sharing today are great because you can keep most of the ingredients in your pantry for months at a time!
Tips for Dips
- Make ahead and store in the refrigerator
- Always bring chips for your own dip – probably 2 bags per dip
Cold Corn Appetizers
Hot dips are amazing, but with it being so warm here in the South, we’ll save the Baked Spinach & Artichoke dip for football season, and let the cold corn dips steal the show for Summer. White shoepeg corn is mild in flavor and goes well with so many different flavor profiles. Both cold corn dips below use white shoepeg corn and black beans!
“LINDA DIP”
White Corn Dip Recipe
2 cans shoepeg corn
1 can black beans
1 can petite diced tomatoes
1/4 cup chopped scallions
8 oz crumbled feta cheese
1/2 cup white distilled vinegar
1/2 cup granulated sugar
Add all ingredients to bowl and incorporate. Cover and refrigerate (at least 1 hour) until ready to serve.
Apple Cider Corn Dip
Black Bean & Feta Dip with Apple Cider Dressing
2 cans white shoepeg corn, drained
2 can black beans, drained and rinsed
8 oz feta cheese
1/2 cup sugar
3/4 cup canola oil
3/4 cup apple cider vinegar
Salt, pepper and garlic powder to taste
Add all ingredients to bowl and incorporate. Cover and refrigerate (at least 1 hour) until ready to serve.
