To make mint simple syrup, add equal parts sugar and water to a sauce pan over medium heat and allow sugar to dissolve. Remove from heat and add a bunch of mint and allow to steep for atleast 10 minutes. Then, allow to cool. You can store in fridge for 1-2 weeks.
Add all ingredients to cocktail shaker. Shake and strain over ice in low ball glass. Garnish with mint and lime wedge. Enjoy!!
