Jamaican Jerk Rice Bowl Recipe

  • 2 Chicken Breast Cutlets
  • Jerk Marinade
  • 1 can black beans drained and washed
  • 1 mango
  • roasted red pepper
  • 2 packages MinuteĀ® Ready to Serve Cilantro & Lime Jasmine Rice
  • 1 avocado
  • 1/2 juice lime


  1. Place 2 chicken breasts in a bag or bowl and cover with jerk sauce. Marinade for 30 minutes, or up to 4 hours.

  2. Grill Chicken to internal temp of 165 degrees F

  3. If roasting your own red pepper, add to grill as well

  4. To make avocado puree, add avocado (remove pit) to medium bowl. Add 1/2 juice of lime, salt and pepper to taste. Use immersion blender and puree until smooth. If you don't have immersion blender, the back of a fork will work. Stir vigorously until smooth.

  5. Drain and wash black beans

  6. Prepare mango my cutting into slices or chunks

  7. Prepare MinuteĀ® Ready to Serve Cilantro & Lime Jasmine Rice in microwave according to instructions on box.

  8. Assemble everything in your bowl and enjoy immediately!
